You’ve heard this story before. It’s Easter Sunday – you’ve been picked to make the deviled eggs.
You bring your water to a perfect rolling boil, place your eggs in gently, and wait.
Then you pull them out to let them cool and then….then…it’s time to peel…and then cry.
All your hard work…wasted because the eggs won’t peel worth a darn.
Cue chunks of egg white still stuck to the shell with the yolk peeking at you, mocking you.
Well – suffer no more.
I have THE tip that is going to save your sanity. You can thank me later – because I have suffered through every old wive’s tale and trick in the book.
From vinegar to salt to baking soda in the water, waiting for the eggs to age, putting the eggs in when the water is still cold…waiting for the water to boil to put the eggs in, even steaming the eggs (which is my favorite method for hard boiled eggs) – none of them consistently worked.
Only ONE thing truly made the difference.
Want to know the secret?
A 10-minute ice bath.
That’s it.
I don’t care what else you do, as long as you place those eggs directly into an ice bath for 10 minutes after cooking (whichever method you chose), they will peel beautifully every time.
If you make sure that you are separating the albumin from the egg when you first start peeling you will have even greater success and ease in your egg peeling efforts.
I think it’s because the ice bath helps the albumin stick to the eggshell rather than the egg and that’s what makes all the difference.
