Do you ever run out of ideas and just get tired of doing the same thing all the time? I was stuck in a cooking rut.

One of my friends started using a meal prep service and I thought it was super convenient, but we can’t afford that.

So, I did the next best thing and went on to their websites and started downloading their recipes and buying the ingredients on my own when I do my bi-weekly grocery shopping.

 I learned a whole new way of cooking.

 In the past, I would just cook a one pan meal, but I never really managed to get decent side dishes and more vegetables on the table. Meal kits usually include a protein and one or two sides.

 The best part was that it showed me the step-by-step process of incorporating those into my cooking time and being able to work on multiple things at a time. For example, I can have vegetables roasting in the oven while I’m cooking chicken on the stove top.

 This was something I saw Rachel Ray do on her show 30 Minute Meals…. but I never got the hang of it.

Until now. As a result, it has made me better at writing up my recipes too. This is why I’m offering up my Taco Bowl recipe, re-written in a better flow to get you from start to happy tummies much faster.

TACO SALAD W/TORTILLA BOWLS

Taco Meat

1 lb ground beef

1 tablespoon chili powder

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon oregano

1/2 tsp paprika

1 1/2 teaspoon cumin

1 teaspoon salt

1/2 teaspoon pepper

Pinch red pepper flakes

Bubbly Taco Bowls

4 10-12 inch flour tortillas (XL burrito size)

4 tablespoons vegetable oil (or any flavorless oil)

Taco Salad Fixin's

Lettuce

Tomatoes

Olives

Cheese

Sour Cream

Salsa

Pico de gallo

Instructions

Preheat oven to 350 degrees F.

Prep Fixin’s - while the oven is preheating, prep all your fixin’s and taco seasoning.

Bubbly Taco Bowls - Once the oven is heated begin making the taco bowls. Set 4 oven-safe cereal bowls on a large-rimmed baking sheet. Then set a large 12-14 inch skillet on the stovetop over medium heat.

Pour 1 tablespoon of oil into the skillet. Once hot, place the tortilla in the skillet. Use tongs to swirl the tortilla to coat it in oil, flip it over, and swirl it again. It needs to be coated in oil, on both sides, right away.

Pan-fry the tortilla for 30-45 seconds per side, allowing it to puff up with large bubbles. (The bigger the bubbles the better!) Flip and repeat. Make sure the tortilla isn't turning dark. It should be golden brown.

Use tongs to move the tortilla to one of the cereal bowls. Tuck it down into the bottom of the bowl, to create a bowl shape with the tortilla. Take care not to deflate the bubbles.

Repeat with the remaining three tortillas. Once all the tortillas are flash-fried and shaped into bowls, bake for 9-10 minutes until very crispy.

Taco Meat – While the bowls are in the oven, make your taco meat. If you are using a seasoning mix, follow the package directions. If not, then combine all of the ingredients listed with 1/4 cup of water in a pan and simmer until cooked through. Assemble Taco Bowls with all your favorite fixin’s!
